refactor: 重命名项目为 tauri-shell 并更新相关配置

- 更新项目根目录名称为 tauri-shell 并调整相关结构说明
- 移除旧的 tauri-demo 包并添加新的 tauri-shell 包以支持 shell 功能
- 修改项目名称为 tauri-shell
- 修改应用名称和标识符为 tauri-shell
